baked donuts // 3 ways



growing up, sunday mornings consisted of
scrambled eggs & bacon
the three stooges
goody good donuts

ah yes - goody good donuts
they literally made the BEST donuts
it was a little donut shop, the type that was run by a big burly man
and hosted an old school bunn coffee maker in the corner

it was a sad, sad day when goody good closed
i think my dad may have cried a little
he use to visit goody good everyday at least 3 times a day for coffee
on sundays if we were really good he would sneak out, get his cup of coffee
and return with a cardboard box tied with red & white bakers twine
inside that box, if i was lucky would be the  mother of all donuts
i have no idea what the name of that glorious donut was
 but is was big, round & flat covered in maple frosting
it was
absolute heaven

these donuts come in at a close second
a bit healthier than their fried counterpart
but just as tasty and tad bit addicting
okay, really addicting

my favorite, hands down was the coco nutty vanilla glazed donut
true story - i inhaled 2 in the car on the way back from our nephews birthday party
.....i ate these in front of a dunkin donuts with the tea i had just purchased - i know they were jealous
my vegan donuts were way better

what better way to wake up than to the smell of freshly baking donuts

Baked Donuts ~ 3 Ways
recipe for 6 donuts ~ easily doubled
glaze for 12 donuts

you will need:

for the donuts
1 cup all purpose flour
1/2 cup sugar or agave
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/2 cup soy yogurt
3 tbsp vegetable oil
1 tbsp apple cider vinegar
3 tbsp almond milk

for the glazes

coco nutty
1/4 cup powdered sugar
1 tsp butter
1/4 cup shredded unsweetened coconut
1/4 cup finely chopped pistachios
1/4 cup finely chopped pecans

chocolate
1/2 cup powdered sugar
1/4 cup cocoa powder
1 tsp cinnamon
3 tbsp almond milk

vanilla
3/4 cup powdered sugar
1 tsp pure vanilla extract
2 tbsp almond milk

assembly:

preheat oven to 375*
in a medium bowl combine all dry ingredients

in another medium bowl mix all wet ingredients well, until smooth

combine wet and dry together and mix well

transfer batter to a large ziploc bag - this will make the process much easier when piping dough into donut pan
cut corner from bag
pipe batter into each donut round, smoothing out with the back of a spoon if needed

bake in the oven for 10-12 minutes - do not over bake, the donuts will continue to cook in the pan once removed from the oven

remove from oven and allow to cool on pan for 5 minutes - turn donuts onto a cooling rack and allow to fully cool prior to glazing

to make the glazes, in 2 separate bowls combine all ingredients for the chocolate glaze in one bowl and all the ingredients for the vanilla glaze in the other bowl- whisk each glaze until smooth

to make the coco nutty topping - in a small saute pan over medium heat melt vegan butter
add nuts & coconut and stir to coat, then add powdered stirring until all pieces are well coated. cook over medium heat, stirring continuously for 5 - 7 minutes. remove from heat and transfer to a small bowl stirring as they cool to break up any clumps and to keep the mixture crumbly

dip each donut in the glaze of choice following with a dip in the coco nutty mixture if desired
once dipped place back on cooling rack and allow the glaze to set

  1. ahh..i remember when i was little, it was such a perfect sunday when my mom would go to our local bakery and pick us up a half a dozen donuts. my favorite was always the chocolate cake donut with chocolate icing.

    i never tasted a maple glazed donut, but it sounds amazing! and i love your pistachio-coconut glaze! you are so creative ;)

      It is as if I can still smell and taste that maple glazed flat donut- I have never seen one like it any where else besides goody good - oh man do I miss those!

  4. I reaaaaally need a doughnut pan! These looks awesome! My favorite doughnut memory is skipping out of class in grade 12 with my husband(then boyfriend) to go to a bakery for doughnuts. I don't remember the doughnuts being that amazing but it's still my favorite doughnut memory :D

  5. I thought maple-glazed donuts were only a Canadian thing! We used to stop at Tim Hortons after church on Sunday mornings to pick out a donut each - I used to like apple fritters and vanilla glazed donuts with strawberry filling...of course now, I can't imagine eating one and liking one of those. But I would happily consume your vegan baked donuts!

    1. I think he may have been french canadian which could explain the mystery donut that i don't know the name of - all I know is that I would probably give my left arm for that recipe...we french canadians in New England Love our Maple Syrup, that is for sure :)

    side note, i assume the measurement is cup but there is no measurement for the batter: "1/2 sugar or agave"

  16. Thanks!I've asked for a pan for Christmas and your recipe will be first try! I grew up in Cape Breton, eating fresh Mom-made doughnuts. During the summer, she would run an extension cord out the kitchen window to a deep fryer set on a backyard table(original multitasking...watch the kids/cook/tan).Then the hot doughnuts were popped into a heavy paper bag and shaken to coat with cinnamon sugar. I wonder,would your donuts(modern spelling/modern recipe),fresh out of the oven, stand up to this treatment? It was a fun"job" for kids.
